Pomegranate Apple Salad: Easy-to-Make Healthy Holiday Recipe

Pomegranate Apple Salad is easy to make, even if you are deseeding your own pomegranate. The secret to deseeding a pomegranate is to score down the natural edges of the pomegranate and pull it apart. This article will show how easy it is to cut and deseed a pomegranate. If you prefer, you can also buy pomegranate seeds at a grocery store. Trader Joe’s sells them. 

Feel free to customize this recipe by substituting pears for the apples or adding any type of nut. I’ve also added some roasted butternut squash making it a heartier salad.

Pomegranate Apple Salad

Ingredients

5 ounce bag of spring greens
1/4 cup red onion, chopped
2 apples, thinly sliced
3/4 cup pomegranate seeds
1/2 cup pecans, chopped

Salad Dressing
1/2 cup pomegranate juice
Juice of 1 lemon
1 tsp. Dijon mustard
2 tbsp. olive oil
2 tbsp. maple syrup
2 tbsp. water

Directions

  1. Whisk together all the salad dressing ingredients until well blended.
  2. Toss together all salad ingredients. Arrange some apple slices and pomegranate seed in a pleasing manner on the top of the salad. Serve with salad dressing.
  • Add the apples or pears just before serving to prevent browning.
  • Salad dressing can be made in advance and kept in the refrigerator for up to 1 week.
