Main Dish: Winter Squash with Creamy Shiitake Sauce
Creamy Shiitake Sauce is the perfect choice for a special Valentine’s dinner. It’s also quick and easy to make! I typically serve it with roasted spaghetti squash, which takes just under 1 hour to bake.

Salad: Pomegranate Apple Salad
This salad is a family favorite. Fuji apples with pomegranate seeds will add a festive color and delicious flavor to your meal. If you don’t have pomegranate seeds, feel free to substitute raisins.

Dessert: My Favorite 3 Chia Puddings
Chaga Chai with a few fresh pomegranates on top is my chia pudding choice for Valentine’s Day. Chaga mushrooms have powerful immune boosting properties. I purchase chaga powder from Vimergy. Chia pudding needs at least 15 minutes to thicken. I prefer to make it early in the day and let it refrigerate for 2 hours. Any of the 3 puddings in this post will make a wonderful healthy dessert on Valentine’s Day.
