Pomegranate Apple Salad

Ingredients
5 ounce bag of spring greens1/4 cup red onion, chopped
2 apples, thinly sliced
3/4 cup pomegranate seeds
1/2 cup pecans, chopped (optional)
Salad Dressing
1/2 cup pomegranate juice
Juice of 1 lemon
1/3 tsp. mustard powder (or 1 tsp. Dijon mustard)
2 tbsp. olive oil
2 tbsp. maple syrup
2 tbsp. water
Simple Fat Free Dressing
2 tbsp. lemon juice
2 tbsp. maple syrup
⅓ tsp. mustard powder
¼ cup pomegranate juice
Directions
1 Whisk together all the salad dressing ingredients until well blended.2 Toss together all salad ingredients. Arrange some apple slices and pomegranate seed in a pleasing manner on the top of the salad. Serve with salad dressing.
- Add the apples or pears just before serving to prevent browning.
- Salad dressing can be made in advance and kept in the refrigerator for up to 1 week.
