Steam the zucchini, then blend it with a few cashews and herbs in your high speed blender. In 20 minutes, this creamy vegetable soup is ready to serve! My husband says it reminds him of a lighter version of split pea soup.

Creamy Zucchini Soup

Ingredients
8 zucchini, cubed2 cloves garlic
1/3 cup cashews
½ tsp sea salt
1/8 tsp or one dash each of sage and thyme
Directions
