Easy Creamy Zucchini Soup: Surprisingly Delicious GF/Dairy-Free

This is the perfect recipe to have on hand when you have extra zucchini! Not only do I enjoy this rich creamy soup, it’s fast and easy to make. 

Steam the zucchini, then blend it with a few cashews and herbs in your high speed blender. In 20 minutes, this creamy vegetable soup is ready to serve! My husband says it reminds him of a lighter version of split pea soup.

Zucchini is a healthy vegetable — though like tomatoes, zucchini is technically a fruit — full of both vitamins and minerals. It’s easy to digest and rich in antioxidants, which protect the body from aging and illness.

Creamy Zucchini Soup


Ingredients

8 zucchini, cubed
2 cloves garlic
1/3 cup cashews
½ tsp sea salt
1/8 tsp or one dash each of sage and thyme

Directions

Steam zucchini and garlic until tender, approximately 5-10 minutes. Strain and place into high speed blender with the remaining ingredients. Blend until well combined. Serve and enjoy!
