Made of apples, bananas, dates, and of course pumpkin spice; this whole food beverage is a satisfying healthy breakfast, lunch or snack. I enjoy this one serving recipe in the afternoon or as an after dinner treat if I’m tempted with unhealthy snacking.

2 medjool dates, pitted
1/4 cup coconut water (can substitute water)
1/2 tsp. pumpkin spice
1 tsp. alcohol-free vanilla extract or 1/4 tsp. vanilla bean powder
